When trying a Vegan plan just remember that 80-90% of your food should be whole foods and a limited amount of processed foods..
There are many Vegan options out in the market now. You have Impossible products, which I did use. There are breakfast sausage, chicken tenders , chicken patties, meatballs etc. The key is to use products like the Impossible ones in limited amounts. Most of my foods were whole foods. I made stews, chilli , fried rices, spaghetti with a marinara sauce loaded with carrots, onions, mushrooms, peas , but use whatever veggies you like.
